TUNA VEGGIE MELTS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Three 7 oz cans tuna
1/2 cup chopped parsley
1/4 cup pitted olives, chopped
1/2 onion, sliced
Juice of 1 lemon
1/4 tsp paprika
4 whole pitas, each split into 2 rounds
4 oz muenster cheese, sliced
3 tbs oil
3 cups arugula
1 pint cherry tomatoes, halved
2 cucumbers, halved lengthwise, sliced
Heat oven to 350 degrees. Drain tuna, reserving 2 tbs oil. Toss tuna, reserved oil, 1/4 cup parsley, olives, onion, juice of 1/2 lemon, paprika, salt and pepper in a bowl. Spread tuna salad on 4 of the pita halves, top with cheese and remaining pita halves. *Heat 2 tsp oil in a skillet. Add sandwiches, cook until lightly toasted. Transfer to a baking sheet, bake until warmed through 5 min. Toss arugula, tomatoes, cucumbers, remaining parsley, 2 tbs plus 1 tsp oil and juice of remaining 1/2 lemon in a bowl, season with salt and pepper. Cut tuna melts into wedges. SERVE with arugula salad & ENJOY...
