[SimplifyMe] Vegetable Spaghetti FRITTATA

 

VEGETABLE SPAGHETTI FRITTATA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

2 tbs oil
1/2 onion, sliced
1 zucchini, sliced
2 cloves garlic, minced
1 tomato, seeded, diced
2 cups spinach
2 cups cooked spaghetti
2 tbs milk
8 eggs, beaten
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
2 tbs sliced basil

Heat oven to 425 degrees. Warm oil in a skillet. Add onion and zucchini, cook 2 min. Add garlic, tomato, and spinach, cook until spinach wilts. Season with salt and pepper. Toss in spaghetti, mix. *Whisk milk, salt and pepper with eggs. Pour into skillet, coat vegetables and spaghetti with mixture. Cook until eggs begin to set. Sprinkle cheeses on top, place skillet in oven. Bake until eggs have set in center 12 min. *Heat broiler. Broil frittata until golden on top. Sprinkle frittata with basil. Cut into 4 wedges.
