HEARTY MEATY SOUP
MAKES 6 SERVINGS.
3 tbs oil
14 oz smoked beef sausage, sliced into rounds
1 head green cabbage, cored, chopped
1/2 pound potatoes, diced
5 cups chicken broth
28 oz can diced tomatoes, undrained
1/2 tsp crushed red pepper
Warm oil in a pan. Add sausage, cook until browned. Add cabbage and potatoes, cook until cabbage starts to wilt. Pour in broth and tomatoes, stir in red pepper, season with salt and pepper. Bring to a boil, simmer until potatoes and cabbage are tender. SERVE & ENJOY...
