SESAME NOODLES WITH CHICKEN
MAKES 6 SERVINGS.
Salt
1 pound wheat spaghetti
1 clove garlic, chopped
2 tbs chopped ginger
1/2 cup low sodium soy sauce
3 tbs rice vinegar
2 tbs sesame oil
6 tbs peanut butter
1 tsp sugar or Splenda
2 cups shredded cooked boneless skinless chicken breast
2 1/2 cups broccoli florets
2 carrots, shredded
1 bell pepper, seeded, sliced
6 green onions, chopped
Bring a pot of salted water to a boil. Cook pasta 10 min. In a blender, combine garlic and next 6 ingredients, blend until smooth. Drain pasta. Toss with sauce in a bowl. Add chicken, broccoli, carrots, and bell pepper, toss. Sprinkle with green onions. SERVE IMMEDIATELY & ENJOY...
