PEPPERS WITH EGGS
MAKES 6 SERVINGS.
2 tbs oil
1 onion, sliced
1 red bell pepper, seeded, sliced
1 yellow bell pepper, seeded, sliced
1 clove garlic, minced
1 tbs tomato paste
12 eggs
2 tbs grated Parmesan cheese
Heat oven to 425 degrees. Mist 6 shallow 12 oz baking dishes with cooking spray. Place on baking sheet. *Warm oil in a skillet. Add onion and peppers, cook until softened but not browned. Add garlic, saute 1 min. Stir in tomato paste and 1 tbs water, season with salt and pepper. *Divide vegetable mixture among baking dishes. Crack two eggs into each dish, sprinkle with cheese, season with salt and pepper. Bake until eggs are desired doneness. Let stand 5 min. before SERVING & ENJOY...
