BERRY TAPIOCA PUDDING
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 cup strawberries
1 tbs sugar
PUDDING---
2 1/2 cups milk
1/3 cup sugar
3 tbs quick cooking tapioca
1 egg
1 tbs unsalted butter
1 tsp vanilla
Mix berries and sugar in a bowl. Let stand until sugar has dissolved, refrigerate. MAKE TAPIOCA---Combine milk, sugar, tapioca, and egg in a pan, let stand 5 min. Place over heat, cook until tapioca comes to a boil, cook until thickened. Scrape into a bowl, whisk in butter and vanilla, let stand 20 min. SERVE warm with berries & ENJOY...
