MUSHROOM-SAUCE POLENTA---This is yummy and easy to make.
MAKES 2 SERVINGS.
1 tbs unsalted butter
1/2 pound mushrooms, quartered
3/4 cup marinara sauce
Four 1/2" thick slices polenta
1 tbs grated Parmesan
Melt butter in a skillet. Add mushrooms, salt and pepper. Saute until mushrooms start to give off liquid. Add marinara, cook until warmed through. Keep warm. *Heat broiler. Line a broiling pan with foil, oil foil. Arrange polenta on pan. Broil until lightly browned. Turn, sprinkle with Parmesan, broil until lightly browned. Divide polenta among 2 plates. Top with mushroom sauce. SERVE & ENJOY...
