CHEESY SQUASH SPAGHETTI
MAKES 6 SERVINGS.
1 butternut squash, peeled, seeded, cubed
2 tbs oil
1 pound spaghetti
2 tbs unsalted butter, melted
2 tbs chopped sage
1/4 cup grated Parmesan cheese
Heat oven to 400 degrees. Line a baking sheet. On baking sheet, toss squash with oil and salt. Roast until soft 25 min. *Bring a pot of salted water to a boil. Cook spaghetti until tender. Drain pasta, reserving 1/2 cup pasta water. Return spaghetti to pot, add squash, butter, and sage. Stir, adding pasta water as necessary. Top with Parmesan. SERVE & ENJOY...
