CLAM SAUCE PASTA
MAKES 6 SERVINGS.
1 pound linguine pasta
1/3 cup olive oil
2 tbs unsalted butter
4 large cloves garlic, minced
Pinch crushed red pepper
Grated zest and juice of 1 lemon
1/2 tsp oregano
3 tbs vegetable broth
1/3 cup chopped parsley
Three 6.5 oz cans chopped clams, drained, liquid reserved
Bring a pot of salted water to a boil. Cook pasta until al dente. Warm oil and butter in a skillet. Add garlic and red pepper, cook 1 min. Add zest and juice, oregano, broth, half of parsley, and clam juice. BRING to a boil, cook until thickened. Add clams, cook 1 min. Reserve 1 cup pasta water. Drain pasta, add to skillet with remaining parsley, toss. If sauce is too thick, stir in splash of pasta water. SERVE & ENJOY...
