SHRIMP PEA PASTA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
12 oz angel hair pasta
1 cup peas
2 tbs oil
1 pound shrimp, shelled, deveined
1 cup heavy cream
Bring a pot of salted water to a boil. Add pasta, bring back to a boil. Add peas after pasta has cooked 3 min. Continue cooking until pasta is al dente and peas are warmed through. Drain pasta mixture, return to pot, toss with 1 tbs oil, keep warm. *Warm remaining oil in a skillet. Add shrimp, cook until pink. Transfer shrimp to pot with pasta and peas. *Pour cream into skillet. Boil until cream is reduced slightly. Transfer cream to pot with pasta, shrimp, and peas. Stir, season with salt and pepper.
