3-CHEESE BAKED PASTA
MAKES 6 SERVINGS.
1 pound penne rigate pasta
2 tbs oil
1 onion, chopped
1 red bell pepper, seeded, chopped
1 yellow squash, chopped
1 zucchini, chopped
3 cloves garlic, minced
4 cups spaghetti sauce
1/2 cup torn basil
2 cups ricotta cheese
12 oz shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Heat oven to 375 degrees. Bring a pot of salted water to a boil, cook pasta until al dente. In a skillet, warm oil. Add onion, cook 2 min. Add bell pepper, squash, zucchini, and garlic, saute 7 min. Remove from heat. Season with salt and pepper. *Drain pasta, return to pot. Add spaghetti sauce, vegetable mixture, and basil, stir, season with salt and pepper. In a bowl, mix together ricotta, 1 1/2 cups mozzarella, and 1/4 cup Parmesan. *Mist a baking dish with cooking spray. Spread half of pasta mixture in dish, drop spoonfuls of ricotta mixture over pasta. Cover with remaining pasta. Sprinkle with remaining mozzarella and Parmesan. Bake until bubbling 35 min. Allow to rest 10 min. before SERVING & ENJOY...
