VEGGIES & SALISBURY MEATLOAF
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 1/2 pounds potatoes, cut into chunks
1 1/4 pounds ground beef
1/2 cup breadcrumbs
1 egg
1/2 onion, grated
1 1/2 tsp chopped thyme
2 tsp Worcestershire
4 tbs unsalted butter
1 1/2 cups baby carrots, halved lengthwise
3 stalks celery, sliced
1 1/4 cups chicken broth
3 tbs half and half
Put potatoes in a pan, cover with water, season with salt. Bring to a boil, cook until tender. *Combine meat, breadcrumbs, egg, onion, thyme, Worcestershire, salt and pepper in a bowl, mix. Form into 4 patties. *Heat 1 tbs butter in a skillet. Add patties, cook until browned. Scatter carrots and celery around patties, cook until they start softening. Add broth, simmer until patties are cooked through. Remove patties. Cook until broth is slightly reduced, then add 1 tbs butter, swirl until melted. *Drain potatoes, mash with half and half, remaining butter, salt and pepper. SERVE with patties and vegetables & ENJOY...
