BACON VEGGIE PASTA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
12 oz short pasta
4 slices bacon, chopped
1 clove garlic, chopped
1/2 tsp chili powder
1/2 cup chicken broth
15 oz can black beans, drained
1 cup corn kernels
1 cup cherry tomatoes, quartered
Shredded Cheddar cheese
Bring a pot of salted water to a boil. Cook pasta until al dente, drain. Cook bacon in a skillet until crisp. Drain off all but 2 tbs fat in skillet. Saute garlic and chili powder 30 seconds. ADD broth, beans, corn, and tomatoes, bring to a boil, simmer until heated through. Toss pasta in skillet. Season. Sprinkle with cheese. SERVE & ENJOY...
