BUTTERMILK SPICE CUPCAKES
MAKES 18 CUPCAKES.
2 cups flour
1/2 tsp cinnamon
1/2 tsp ginger
Pinch nutmeg
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
8 tbs unsalted butter
1 cup sugar
2 eggs
1 tsp vanilla
1 cup buttermilk
Heat oven to 350 degrees. Line a 12 cup and a 6 cup muffin tin with paper liners. In a bowl, whisk first 7 ingredients. In a bowl, beat butter and sugar until light. Beat in eggs, then mix in vanilla until smooth. *ADD 1/3 of flour mixture, beat until incorporated. Beat in 1/2 cup buttermilk, repeat. Divide batter among muffin cups. Bake until done 20 min. Let cool 5 min. in pans, remove cupcakes from pans. SERVE with a cup of hot tea & ENJOY...
