[SimplifyMe] Spicy-Ketchup Cajun {Chicken}

 

SPICY-KETCHUP CAJUN CHICKEN
MAKES 2 SERVINGS.

CHICKEN---
1/2 pound chicken tenders, halved crosswise
1/4 cup milk
1/2 cup cornmeal
1/2 tsp oregano
1/8 tsp cayenne
1 tbs unsalted butter
1 tbs oil
SPICY KETCHUP---
1/2 cup ketchup
1/4 tsp Tabasco
1/2 tbs brown sugar
1 tsp lemon juice

Season chicken with salt and pepper. Place milk in a bowl. Mix cornmeal, oregano, cayenne, and salt in a separate bowl. Melt butter with oil in a skillet. Dip chicken pieces in milk, then dredge in cornmeal mixture. Transfer to skillet, fry until browned and cooked through. *Mix ketchup, Tabasco, sugar, and lemon juice in a bowl. Season with salt and pepper. SERVE chicken with ketchup & ENJOY...
