[SimplifyMe] Chicken & {Cauliflower}

 

CHICKEN & CAULIFLOWER
MAKES 4 SERVINGS.

4 whole chicken legs
3 tbs oil
4 cups cauliflower florets
12 cloves garlic, peeled, smashed

Heat oven to 400 degrees. Pat chicken dry, season. In skillet, heat oil. Add chicken, skin side down, cook until browned. Turn over, cook until browned. Transfer to plate. Add cauliflower and garlic to skillet. Cook until cauliflower begins to brown. Top with chicken, bake until chicken is cooked through 25 min. then SERVE...

[SimplifyMe] Seafood Rice {Paella}

 

SEAFOOD RICE PAELLA
MAKES 4 SERVINGS.

1/2 pound shrimp
1 cup dry white wine
1/2 tsp crumbled saffron
2 tbs tomato paste
3 cloves garlic, chopped
1 onion, chopped
4 cups clam juice
1 pound clams
1 1/2 cups short grain brown rice
1 tsp paprika
Salt and Pepper
1 green bell pepper, chopped
1/4 cup oil

Heat oven to 425 degrees. In a saucepan, bring clam juice to a simmer. Heat a skillet. Add oil, onion, bell pepper, garlic, 1 tsp salt and 3/4 tsp pepper, cook until onion is golden. Add tomato paste, paprika, and saffron, cook 1 min. Add rice, then stir in wine. Bring to a boil, cooking until liquid is reduced by half. Add hot clam juice, then bring to a boil, cook 5 min. Add clams, transfer paella to oven. Bake until clams open, discard any that don't 30 min. Nestle shrimp into paella. Bake until rice is cooked through and shrimp are opaque 5 min. Let cool 5 min. before SERVING...

[SimplifyMe] Skillet Fried {Chicken}

 

SKILLET FRIED CHICKEN
MAKES 4 SERVINGS.

3 cups plus 1 tbs oil
2 tsp paprika
2 tsp garlic powder
1 1/4 cups flour
4 chicken thighs
1 tbs hot sauce
1/4 cup brown sugar or Splenda
1 egg
2 tsp baking powder
2 tsp cayenne
4 chicken drumsticks
Salt and Pepper
3 tbs Worcestershire sauce

In a saucepan, bring 4 cups water, brown sugar, Worcestershire, hot sauce, 2 tbs salt and 1 tbs pepper to a simmer, stirring until sugar dissolves. Transfer to a bowl, let cool. Add chicken, refrigerate 3 hours. Remove chicken from brine, pat dry. In a bowl, whisk flour, cayenne, garlic powder, baking powder, paprika, 2 tsp salt and 1 tsp pepper. In another bowl, whisk 1 1/2 cups water, egg and 1 tbs oil. Whisk flour mixture into liquid mixture. In a skillet, heat remaining oil. Dip each chicken piece into batter, then add to skillet. Fry until chicken is deep golden brown. Transfer to paper towels, then SERVE...

1/2 tbs oil

SHIRT TIP

After multiple washings the collars on my polo shirts have gotten creased and won't lie flat. Buy a can of spray starch and use your iron to get rid of those unruly wrinkles. Just spray the back of the collar with the starch, let it set for a few seconds, then glide your fingers over it, applying some pressure to work it in. With your iron on a low to medium setting, press back of collar first, then front side. That should make it nice and crisp...

BERRY PUDDING CAKE
MAKES 6 SERVINGS.

3 cups assorted berries
1/2 cup flour
Dash salt
1/4 cup sugar or Splenda
1/2 tsp baking powder
1 cup fat free milk
1 tsp vanilla
2 eggs

Heat oven to 400 degrees. Coat six 6 oz individual baking dishes with cooking spray. Arrange dishes in a baking pan, set aside. In a bowl, whisk eggs. Whisk in sugar, vanilla and salt until frothy.
