BERRY PUDDING CAKE
MAKES 6 SERVINGS.
3 cups assorted berries
1/2 cup flour
Dash salt
1/4 cup sugar or Splenda
1/2 tsp baking powder
1 cup fat free milk
1 tsp vanilla
2 eggs
Heat oven to 400 degrees. Coat six 6 oz individual baking dishes with cooking spray. Arrange dishes in a baking pan, set aside. In a bowl, whisk eggs. Whisk in sugar, vanilla and salt until frothy. Whisk in milk until combined. Add flour and baking powder, whisk until smooth. Divide berries among dishes in pan. Pour batter over berries. Bake 20 min. or until topping is golden. SERVE warm...
