ROASTED CHERRY TOMATOES
MAKES 24 TOPPED CRACKERS, 8 SERVINGS.
4 basil leaves, torn into 24 pieces
1/8 tsp pepper
2 tbs chopped basil
1/8 tsp salt
12 cherry tomatoes, halved
24 Town House flatbread crisps roasted garlic crackers
1/4 tsp salt
1/2 cup ricotta cheese
Dash pepper
2 tsp oil
In bowl, toss together tomatoes, oil, 1/8 tsp salt and a dash of pepper. Arrange tomatoes, cut side down, on baking sheet lined with foil. Bake at 325 degrees for 25 min. or until tomatoes are soft. In a bowl, stir together ricotta, chopped basil, salt and pepper. Spread 1 tsp cheese mixture on each cracker. Top with tomato half, garnish with basil piece, then SERVE...
