SHRIMP ON CRACKERS
MAKES 8 SERVINGS.
24 Town House flatbread crisps roasted garlic crackers
1/2 cup hummus
Dash pepper
3/4 tsp dried oregano
1 tbs oil
1 tsp grated lemon peel
4 slices lemon
1/2 tsp salt
1 tsp honey
12 shrimp
Peel, devein and remove tails from shrimp. In bowl, toss together shrimp, oil, honey, oregano, salt and pepper. Heat grill. Add shrimp. Cook until shrimp turn opaque and grill marks appear. Remove from grill. Cool slightly. Cut each shrimp in half crosswise. Set aside. PLACE lemon slices on grill. Cook until beginning to brown. Remove from grill. Cut each slice into 6 segments. In bowl, stir together hummus and lemon peel. Spread 1 tsp of hummus mixture on each cracker. Top each with piece of shrimp and lemon segment, then SERVE...
