[SimplifyMe] Seafood Rice {Paella}

 

SEAFOOD RICE PAELLA
MAKES 4 SERVINGS.

1/2 pound shrimp
1 cup dry white wine
1/2 tsp crumbled saffron
2 tbs tomato paste
3 cloves garlic, chopped
1 onion, chopped
4 cups clam juice
1 pound clams
1 1/2 cups short grain brown rice
1 tsp paprika
Salt and Pepper
1 green bell pepper, chopped
1/4 cup oil

Heat oven to 425 degrees. In a saucepan, bring clam juice to a simmer. Heat a skillet. Add oil, onion, bell pepper, garlic, 1 tsp salt and 3/4 tsp pepper, cook until onion is golden. Add tomato paste, paprika, and saffron, cook 1 min. Add rice, then stir in wine. Bring to a boil, cooking until liquid is reduced by half. Add hot clam juice, then bring to a boil, cook 5 min. Add clams, transfer paella to oven. Bake until clams open, discard any that don't 30 min. Nestle shrimp into paella. Bake until rice is cooked through and shrimp are opaque 5 min. Let cool 5 min. before SERVING...
