[SimplifyMe] Salad Sandwiches with {Egg}

 

SALAD SANDWICHES WITH EGG
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

4 red bell peppers
4 1/2 tbs olive oil
1 tbs red wine vinegar
Salt
1 clove garlic, grated
8 slices bacon, cut into pieces
1 tbs white vinegar
4 eggs
8 oz lowfat cream cheese
4 rolls, split, toasted
4 cups shredded lettuce

Heat broiler. Arrange peppers on a baking sheet, broil until charred. Transfer to a bowl, cover with plastic, let steam 15 min. Peel, seed, cut peppers into strips. In a bowl, toss peppers with 1 1/2 tbs olive oil, vinegar, salt and garlic. Let marinate 30 min.  *In a skillet, cook bacon until crispy. Transfer bacon to paper towels. Drizzle 1 tbs bacon drippings over peppers, toss. Fill a skillet with water. Add white vinegar and salt, bring to a simmer. Break 1 egg into a bowl, slide egg into water. Repeat with remaining eggs. Cook eggs to desired doneness. Remove eggs. Transfer to a plate. Season.  *In a bowl, mix cream cheese, remaining oil and salt. Spread cream cheese mixture over roll bottoms. Toss lettuce and bacon with pepper mixture, divide among roll bottoms. Top each sandwich with an egg and a roll top. SERVE & ENJOY...

[SimplifyMe] Jicama Tacos with {Salsa}

 

JICAMA TACOS WITH SALSA
MAKES 2 SERVINGS.

6 slices jicama, thinly sliced into tortilla size rounds
1/4 cup salsa
6 dill pickle spears, sliced in thirds
Shredded lettuce
1 tsp chipotle pepper powder
Salt and Pepper

Place jicama in a bowl of water for 15 min. Remove jicama from water, dry, season with salt, pepper and chipotle powder. Place pickle, salsa and lettuce on jicama rounds, fold sides to resemble a taco. Secure with a toothpick. SERVE & ENJOY...

[SimplifyMe] Fish Sandwiches with {Slaw}

 

FISH SANDWICHES WITH SLAW
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 bunch green onions, trimmed, cut into thin strips
6 ribs celery, cut into thin strips
4 fish fillets
Salt and Pepper
1/2 cup flour
1 tsp chopped dill
3 eggs
3 tbs lemon juice
3 tbs olive oil
2 tbs butter
1 lemon, sliced into rounds
1/4 head lettuce, shredded
8 slices wheat bread

Place green onions and celery in a bowl of ice water. Soak until vegetables curl. Season fish with salt and pepper. On a plate, mix flour and dill. In a bowl, whisk egg and 1 tbs lemon juice.  *In a skillet, heat 1 tbs oil. Melt butter in oil. Dredge fish in flour, then coat in egg mixture. Cook until coating is golden and fish is opaque. Transfer fish to a plate. Add lemon slices to skillet, cook until browned.  *Drain green onions and celery. In bowl, toss green onions and celery with lettuce and remaining lemon juice and oil, season with salt and pepper. Divide slaw  among 4 bread slices. Add fish, lemon slices and remaining bread slices. SERVE & ENJOY...

[SimplifyMe] Asparagus with Herb {Butter}

 

ASPARAGUS WITH HERB BUTTER
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

4 tbs unsalted butter
1 clove garlic, minced
2 tbs chopped parsley
2 tsp grated lemon zest
Salt and Pepper
1 pound asparagus, trimmed

Combine butter, garlic, parsley, zest, salt and pepper in a processor or blender. Process until blended. Place asparagus in a skillet. Add water to cover, plus a pinch of salt. Bring to a boil, simmer until tender. Drain, transfer to a platter. Add some herbed butter. SERVE warm & ENJOY...

[SimplifyMe] Grapefruit Sauce over {Chicken}

 

GRAPEFRUIT SAUCE OVER CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

2 Ruby Red grapefruits
4 chicken cutlets
Salt and Pepper
1/2 cup flour
 3 eggs
1 tbs lemon juice
2 tbs olive oil
1/4 cup reduced sodium chicken stock
1/2 cup fruity white wine or broth
2 tbs butter
2 tbs chopped tarragon
2 tbs chopped chives

Cut peel and pith from grapefruits. Cut between membranes, releasing grapefruit segments into a bowl. Season chicken with salt and pepper. Place flour on a plate. In a bowl, whisk eggs and lemon juice.  *In a skillet, heat oil. Dredge chicken in flour, then coat in egg mixture. Cook until coating is golden and chicken is cooked through. Transfer chicken to a platter.  *Pour stock into skillet, cook 2 min. Add wine, cook 1 min. Melt butter into sauce, then stir in tarragon, chives and grapefruit segments. Pour sauce over chicken. SERVE & ENJOY...

STEAK TOPPED WITH TOMATOES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

2 tbs olive oil
4 ribeye steaks
1 pint cherry tomatoes
3 cloves garlic, minced
1 tbs balsamic vinegar
1 tbs chopped parsley
1 1/2 tsp oregano

In skillet, heat oil. Season steaks, cook to desired doneness, transfer to plate. Cook tomatoes 5 min. Add next 4 ingredients, cook 5 min. Season. SERVE with steak & ENJOY...

[SimplifyMe] Deviled Eggs with {Herbs}

 

DEVILED EGGS WITH HERBS
MAKES 6 SERVINGS.

12 eggs
1 cup basil leaves
1/2 cup light mayonnaise
1/4 tsp salt
1/4 tsp pepper

Place eggs in a pan, cover with water, bring to a boil. Remove from heat, let stand 12 min. Fill a bowl with ice water. Transfer eggs to bowl, let cool. Peel eggs. Cut eggs in half lengthwise, remove yolks to a bowl. Refrigerate whites.  *Bring a pot of water to a boil. Add basil, return to a boil, cook 1 min. Drain, squeeze out excess moisture. Transfer to a processor or blender. Add yolks, mayo, salt and pepper. Blend until smooth. Fill each egg white cavity with 1 tsp yolk mixture, place on a platter. SERVE & ENJOY...

[SimplifyMe] S'Mores Fondue with {Dippers}

 

S'MORES FONDUE WITH DIPPERS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1/2 cup half and half
a pinch salt
12 oz dark chocolate, chopped
2 tbs lowfat sour cream
Marshmallows, lowfat graham crackers, berries and bananas for dipping

In pan, bring half and half and salt to a boil. Off heat, add chocolate, let stand 30 seconds. Whisk in sour cream until smooth. SERVE with dippers & ENJOY...
