NUT AND COCONUT CARAMELS---Yummy, makes a great gift.
MAKES 1 1/2 POUNDS.
1 tsp plus 1/2 cup butter
1 cup brown sugar or Splenda
1/2 cup corn syrup
1/4 tsp cream of tartar
3/4 cup sweetened condensed milk
1/2 cup flaked coconut
1/2 cup chopped almonds
1/2 tsp vanilla
Line an 8" square baking dish with foil, grease foil with 1 tsp butter, set aside. In a pan, combine brown sugar, corn syrup, cream of tartar and remaining butter, bring to a boil. Remove from heat, stir in milk. Cook until candy thermometer reads 244 degrees. *Remove from heat, stir in remaining ingredients. Pour into dish. Refrigerate 2 hours. Using foil, lift candy out of dish. Peel off foil, cut caramel into 1" squares. Wrap individually in wax paper, twist ends. SERVE & ENJOY...
