PEA TOMATO PASTA---Goes good with garlic bread.
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Salt and Pepper
1 pound penne rigate or any pasta
1 cup vegetable stock
1 clove garlic, crushed
16 oz bag frozen peas
1/4 cup dill
1/4 cup parsley
3 tbs lemon juice
3 tbs olive oil
1/2 pound shaved Parmesan cheese
1 cup cherry tomatoes, quartered
Bring a pot of water to a boil. Salt water, add pasta, cook until al dente. In a skillet, simmer stock and garlic. Add peas, cook until tender. Transfer 1 cup cooked peas to a bowl. Transfer remaining peas, stock and garlic to a blender. *Add herbs, lemon juice and oil, season with salt and pepper. Pulse until a coarse puree forms, then transfer to a bowl. Drain pasta, reserving 1/4 cup pasta water. Add pasta water and reserved peas to sauce, toss with pasta, season. Divide pasta among bowls. Top with cheese and tomatoes, season. SERVE & ENJOY...
