VEGGIE SALAD WITH SALAMI VINAIGRETTE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
SALAMI VINAIGRETTE---
2 tbs oil
1/4 cup minced onion
1 clove garlic, sliced
4 oz sliced salami
3/4 cup chicken stock
1 tsp pepper
3 tbs red wine vinegar
1/2 tsp salt
1/2 cup olive oil
SALAD---
2 zucchini, halved lengthwise, then sliced
1/4 cup olive oil
1 tsp salt
4 tomatoes, cut into chunks
1 cucumber, halved lengthwise, then sliced
1/2 onion, cut into wedges
1/2 cup olives, pitted, halved
2 tsp dried oregano
1 cup cubed cheddar cheese
4 oz salami, cut into matchsticks
In a pan, heat oil. Add onion and garlic, cook until soft. Add salami, cook until the oil releases. Add stock and pepper, bring to a boil, simmer until salami softens. Let cool 5 min. *Transfer mixture to a processor or blender, puree 2 min. Add vinegar and salt, puree 1 min. Add olive oil. Transfer vinaigrette to a bowl. Chill. Heat a grill. In a bowl, toss zucchini, oil and salt. Cook vegetables until tender. Let cool. *Transfer zucchini to a bowl, toss with tomatoes, cucumber, onion, olives, oregano and vinaigrette. Divide salad among plates. Top with cheese and salami pieces. SERVE & ENJOY...
