CANNING CRANBERRIES---Makes a great gift.
MAKES 4 HALF PINTS.
2 pkgs 12 oz each fresh or frozen cranberries, thawed
1 1/2 cups sugar
1 cup orange juice
1/4 cup bourbon
3 tsp vanilla
1 tsp grated orange peel
In a pan, combine cranberries, sugar, orange juice, and bourbon. Bring to a boil, simmer until berries pop and mixture has thickened. *Stir in vanilla and orange peel. Ladle hot mixture into hot half pint jars, leaving 1/4" headspace. Remove air bubbles, wipe rims, adjust lids. Process 15 min. in a boiling water canner. SERVE as a great side dish & ENJOY...
