PEACH SALAD WITH HERB DRESSING
MAKES 6 SERVINGS.
1 head radicchio, leaves torn
1 bunch watercress
3 peaches, sliced into wedges
1 cup cubed cheddar cheese
1/4 cup olive oil
1 1/2 tbs red wine vinegar
1 1/2 tsp chopped thyme
1/2 clove garlic, minced
In bowl, toss radicchio, watercress, peaches and cheese. In bowl, whisk remaining ingredients, season. Toss salad with dressing. SERVE with croutons if desired & ENJOY...
