CORN BACON POTATO SALAD
MAKES 6 SERVINGS.
2 pounds potatoes
Salt
1/2 cup parsley chopped
Place potatoes in a pot, cover with water, bring to a boil. Add 2 tsp salt, simmer until potatoes are tender. Drain. Cool. Cut potatoes in chunks. Add potatoes to dressing, toss. Fold in parsley. Toss with 1 ear corn, cut from cob, and 1/2 onion, sliced. Fold in 6 slices bacon, cooked, broken into pieces, and 2 cups arugula, chopped. DRESSING---In a bowl, whisk together 3 tbs oil, 2 tbs red wine vinegar, 1 tbs Dijon mustard, salt and pepper. SERVE & ENJOY...
