[SimplifyMe] Pickle Egg {Potato Salad}

 

PICKLE EGG POTATO SALAD
MAKES 6 SERVINGS.

2 pounds potatoes
Salt
1/2 cup dill, chopped

Place potatoes in a pot, cover with water, bring to a boil. Add 2 tsp salt, simmer until potatoes are tender. Drain. Cool. Cut potatoes in chunks. Add potatoes to dressing, toss. Fold in dill. Fold in 4 hard boiled eggs, chopped, and 2 pickles, cut into pieces. DRESSING---In a bowl, whisk together 3 tbs sour cream, 2 tbs mayonnaise, 1 tbs red wine vinegar, salt and pepper. SERVE & ENJOY...
