[SimplifyMe] Chicken Asparagus {Over Rice}

 

CHICKEN ASPARAGUS OVER RICE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 pound boneless skinless chicken thighs, cut into pieces
2 tbs soy sauce
1 tsp cornstarch
2 cloves garlic, sliced
3 tbs oil
1 pound asparagus, trimmed, sliced into pieces
1/2 head lettuce, cored, chopped
3 cups cooked long grain rice
1/2 cup chopped chives

In a bowl, toss chicken with 1 tbs soy sauce, cornstarch and half the garlic. Let marinate 10 min. *In a skillet, heat 1 tbs oil. Add remaining garlic, cook 30 seconds. Add asparagus and 1 tsp water, season, cook until tender. Transfer to a bowl. *In same skillet, heat remaining oil. Add chicken, cook until browned and cooked through. Stir in lettuce, season, cook until wilted. Stir in asparagus and remaining soy sauce. Season. SERVE over rice, garnish with chives & ENJOY...
