[SimplifyMe] Corny Guacamole {Fish Tacos}

 

CORNY GUACAMOLE FISH TACOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

3 tbs oil
2 tbs lime juice
1 tsp chili powder
1/2 tsp each cumin, coriander, granulated garlic, and granulated onion
1 1/2 pounds fish, cut into strips
Salt and Pepper
1/2 onion, chopped
1 jalapeno, seeded, chopped
2 tbs lemon juice
1 clove garlic, grated
2 avocados, halved, pitted
1 ear corn, grilled, kernels scraped
1 tomato, seeded, chopped
12 corn tortillas
Shredded lettuce

In a bowl, combine first 7 ingredients. Add fish, season with salt and pepper, toss. Let stand 15 min. In a bowl, combine onion, jalapeno, lemon juice and garlic. Sprinkle with salt, let stand 10 min. Scoop avocado into bowl, mash. Stir in corn, and tomato, season. *Heat a skillet. Cook fish until lightly browned and opaque. Heat a skillet. Add one tortilla, cook until blistered in spots. Wrap in a towel to keep warm. Repeat with remaining tortillas. Fill tortillas with lettuce and fish, top with guacamole. SERVE & ENJOY...
