POTATO QUICK BREAD
MAKES 8 SLICES.
Heat oven to 350 degrees. Line a loaf pan with parchment, leaving an overhang, coat with cooking spray. MAKE BATTER---Whisk 1 cup sweet potato puree, 1/2 cup each oil and brown sugar, 1/4 cup water, 2 eggs, and 1 tsp vanilla. Separately, whisk 2 1/4 cups flour, 3/4 cup sugar, 1/2 cup chopped pecans, 1 tsp orange zest, 2 tsp baking powder, 1 1/2 tsp pumpkin pie spice, and 1/2 tsp salt. Fold wet ingredients into dry ingredients. Bake 70 min. or until done. Let cool 1 hour, then remove loaf from pan. SERVE & ENJOY...
