APPLE BUTTERSCOTCH BLONDIES
MAKES 12 BLONDIES.
1 cup flour
1/2 tsp salt
1/4 tsp baking powder
6 tbs unsalted butter
3/4 cup brown sugar
1 tsp vanilla
2 eggs
1 apple, peeled, chopped
1/3 cup butterscotch chips
Heat oven to 350 degrees. Line a 8" square baking dish with foil, leaving a overhang. Coat with cooking spray, set aside. Whisk flour, salt, and baking powder in a bowl. Melt butter in a pan, cook until it starts browning. Remove from heat. WHISK in brown sugar and vanilla until dissolved, let cool slightly. Add eggs, whisk until smooth. Stir in flour mixture, then apple and butterscotch chips. Pour into pan. Bake blondies until top is lightly browned 25 min. Let cool in pan. Lift out of pan, cut into pieces. SERVE & ENJOY...
