CARROT BEAN SOUP
MAKES 6 SERVINGS.
1 1/2 tbs oil
1 onion, diced
3 cloves garlic, minced
1 bell pepper, seeded, diced
4 carrots, diced
3 ribs celery, sliced
1 tbs chili powder
1/2 tsp cumin
6 cups chicken broth
Four 15 oz cans black beans, drained
6 tbs Greek yogurt
Warm oil in a pan. Add onion, garlic, bell pepper, carrots, and celery, cook until softened. Add chili powder and cumin, saute 3 min. Stir in broth and beans, then bring to a boil, simmer 25 min. *REMOVE 2 cups soup, puree in a blender. Stir pureed soup back into pot, cook 5 min. Season. Spoon soup into bowls, top with yogurt. SERVE with crackers & ENJOY...
