VEGGIE PASTA SLOWCOOKER
MAKES 6 SERVINGS.
2 tbs unsalted butter
1 onion, chopped
1 rib celery, chopped
1 carrot, chopped
1 clove garlic, minced
1 eggplant, peeled, diced
10 oz mushrooms, chopped
28 oz can crushed tomatoes
1 pound penne pasta
Grated Parmesan cheese
Mist a slowcooker with cooking spray. Combine first 5 ingredients in slowcooker. Add eggplant, mushrooms, and salt. Stir in tomatoes, cook on low 6 hours. *Bring a pot of salted water to a boil. Cook pasta until tender. Drain pasta, toss with sauce, sprinkle with Parmesan. SERVE & ENJOY...
