DRIED FRUIT CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3/4 cup dried apricots, chopped
3/4 cup dried cherries
3/4 cup pitted prunes, chopped
1 tsp dry mustard
1/2 cup orange juice
1/2 cup cider vinegar
4 pound chicken, cut into 8 pieces
Heat oven to 375 degrees. In a pan, combine fruit, mustard, juice, and vinegar. Cook until mixture is thick. Line a 9x13" baking pan with foil, mist with cooking spray. *SEASON chicken, place in pan. Pour fruit mixture over chicken. Bake until done 1 hour. Let rest 5 min. before SERVING with cooked rice & ENJOY...
