[SimplifyMe] Chicken Curry STEW

 

CHICKEN CURRY STEW
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

3 tbs oil
1 pound mushrooms, sliced
2 carrots, sliced
3 shallots, chopped
3 cloves garlic, minced
1 pound ground chicken
1/4 cup chicken broth
2 tbs soy sauce
13.6 oz can coconut milk
1/2 tsp red curry paste
2 tbs chopped basil

Warm 1 tbs oil in a skillet. Saute mushrooms until golden. Transfer to a bowl. Add 1 tbs oil to skillet. Saute carrots until tender. Transfer to bowl. Add remaining oil to skillet. Saute shallots until softened. Stir in garlic, saute 30 seconds. *ADD chicken, saute until cooked through. Stir in broth, soy sauce, coconut milk, and curry, bring to a boil, then simmer 5 min. Remove from heat, stir in basil. SERVE with crusty bread & ENJOY...
