CHEESE FONDUE WITH CHIPS
MAKES 6 SERVINGS.
2 poblano chile peppers
1 tbs olive oil
8 oz chorizo, casings removed
1/2 cup chopped green onions
2 tbs flour
1/2 cup beer
2 cups grated cheddar cheese
2 cups grated muenster cheese
Tortilla chips
Heat broiler. Put poblanos on broiler pan, broil until charred. Transfer to a bowl, cover, let steam 10 min. Scrape off charred skin, remove stems, and seeds. Chop peppers, set aside. *Heat oil in a skillet. Add chorizo, cook until cooked through. Add green onions and poblanos, cook until green onions are wilted. Add flour, cook 1 min. *Add beer, bring to a boil, cook until thickened. Add cheese, stir until melted. Transfer skillet to broiler, broil until browned. SERVE WITH CHIPS & ENJOY...
