COOKIES 'N' CREAM STACKS
MAKES 8 SERVINGS.
1 3/4 cups chilled coconut cream
6 tbs powdered sugar
1/4 tsp peppermint extract
9 oz pkg chocolate wafer cookies
1/4 cup shredded coconut
8 chocolate mint candies
In chilled bowl with chilled beaters, beat coconut cream 3 min. Add sugar and extract. Beat until thickened and fluffy. Spoon mixture into pastry bag fitted with star tip. Arrange 8 cookies on platter. Alternately pipe whipped cream and layer with remaining cookies to create stacks, using 5 cookies for each. Sprinkle with coconut. Top with candy. SERVE & ENJOY...
