CHEESY TOMATO SALAD
MAKES 4 SERVINGS.
3/4 pound tomatoes, diced
1/2 cup sliced onions
1/2 cup Italian dressing
1 orange, zested, juiced
8 slices French bread
4 tsp garlic oil
8 oz pkg marinated mozzarella cheese balls, chopped
1/4 cup chopped basil
In bowl, combine tomatoes, onions, dressing, 1/4 cup orange juice, and 2 tsp orange zest. Season with salt and pepper, set aside. Heat grill. Brush both sides of bread slices with oil. Grill until golden brown. Toss mozzarella and basil with tomato mixture. Arrange over grilled bread on platter. SERVE & ENJOY...
