WARM BARLEY MUSHROOM SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
BARLEY---
1 cup pearled barley
1 onion, halved
1 bay leaf
STEAK---
1 1/2 pounds flank steak
2 tbs chopped rosemary
2 cloves garlic, chopped
Olive oil
1/2 cup chopped parsley
1 lemon, juiced
SALAD---
1 pound mushrooms, chopped
1 rib celery, chopped
1 onion, chopped
3 cups chopped kale
Shaved cheese
3 tbs olive oil
1 1/2 cups beef stock
Nutmeg
In a pot, cover barley with water, bring to a boil with bay leaf, onion, and salt. Cook until tender, then drain, discarding bay leaf and onion. *Heat a skillet. Dress beef with rosemary, garlic, salt and pepper. Brush with oil, grill 12 min. Let rest for a few minutes, then slice. Toss with parsley and lemon juice. *In a skillet, heat 3 tbs oil. Add mushrooms, cook until browned. Add celery and onion, cook 3 min. Add stock, simmer 8 min. Add greens and nutmeg, cook to wilt. Add barley. Top warm salad with steak, garnish with cheese. SERVE & ENJOY...
