SAUSAGES WITH APPLE HASH
MAKES 4 SERVINGS.
4 potatoes, peeled, cubed
2 apples, cored, skin on, cubed
1 onion, chopped
8 oz cheddar cheese, shredded
8 sausages
1 tbs canola oil
2 tbs butter
1 tbs thyme, chopped
Spicy brown mustard
Honey
In a pot of salted boiling water, parboil potatoes 5 min. drain. In a skillet, heat oil. Melt butter in oil, add potatoes, cook until lightly brown. Add apples and onion, season with salt, pepper, and thyme, cook until apples are tender and potatoes are golden. Remove from heat. Top hash with cheese. In a skillet, simmer sausages in water to heat through. Butterfly sausages, then in a skillet, cook until crisp. SERVE sausages on apple potato hash, top with mustard and honey & ENJOY...
