QUICK GUACAMOLE POTATO-SKINS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
4 potatoes
1/2 cup grated pepper Jack cheese
2 strips cooked bacon, crumbled
1/4 cup reduced fat sour cream
2/3 cup guacamole
Heat grill. Microwave potatoes until tender. Let cool slightly. Cut in half, scoop out flesh, leaving 1/4" shell. Top potato shells with cheese and bacon. Grill 3 min. Top with sour cream and guacamole. SERVE warm & ENJOY...
