HERB PORK FIG SKEWERS
MAKES 4 SERVINGS.
1 1/2 pounds pork tenderloin, cubed
1 bulb fennel, cored, cut into chunks
12 figs, stemmed, halved
2 tsp fennel seeds
1/2 tsp pepper flakes
2 bay leaves, torn
1 tsp chopped rosemary
2 cloves garlic, sliced
1 tbs honey
2 tbs oil
Juice of 1 lemon
Heat a grill. Brush grates with oil. Combine fennel seeds, salt, pepper flakes, and bay leaves, grind until powdery. Toss with pork, rosemary, and garlic in a bowl, refrigerate 1 hour. *Thread fennel, figs, and pork onto 8 skewers, set aside. Mix honey, oil, and lemon juice in a bowl. Grill kebabs until cooked through, brushing with honey mixture during last 5 min. of cooking. SERVE & ENJOY...
