[SimplifyMe] Shrimp Wedge {Salad}

 

SHRIMP WEDGE SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 1/4 cups chopped dill
3 cloves garlic, 2 smashed, 1 grated
1 pound large shrimp, peeled, deveined
1 cup mayonnaise
1/2 cup sour cream
1/2 cup Greek yogurt
1 cup diced cucumber
3/4 cup chopped onion
Lemon zest
2 tsp sugar
1 head lettuce

COOK SHRIMP---Fill a bowl with water, add ice, set aside. Fill a pot halfway with water. Add 1/4 dill, 2 smashed garlic cloves, salt and pepper. Bring to a boil, then simmer 5 min. Add shrimp, remove pot from heat, let sit until shrimp is opaque. Drain, transfer to ice bath. *Combine remaining dill, garlic, mayo, sour cream, yogurt, cucumber, onion, zest, and sugar in a bowl, season. Remove shrimp from ice bath, dry and chop. Stir into dressing until combined. *Cut lettuce into 4 wedges. Tear first few layers from center of each wedge to create a bowl in wedge, divide among plates. Fill lettuce bowls with shrimp salad. SERVE cold or at room temp & ENJOY...
