[SimplifyMe] Seared Citrus {Fish}

 

SEARED CITRUS FISH
MAKES 2 SERVINGS.

1 green onion, minced
1 tbs red wine vinegar
1 red bell pepper, diced
1 yellow bell pepper, diced
1 1/2 tbs capers, drained
1 tbs minced basil
1/2 pound boneless fillet of fish
1/2 tsp lemon pepper seasoning
1/4 tsp paprika

In bowl, toss green onion and vinegar. Let sit 5 min. Add peppers, capers, and basil. Season. Cut fish into pieces. In bowl, mix together lemon pepper seasoning and paprika, sprinkle over both sides of fish pieces, coat with cooking spray. In skillet, cook fish until done. SERVE fish with pepper caper salsa & ENJOY...
