HOISIN CHICKEN VEGGIE SKEWERS
MAKES 4 SERVINGS.
1 1/2 pounds skinless boneless chicken thighs, quartered
2 bell peppers, cut into pieces
4 bunches baby bok choy, quartered lengthwise
2 tbs oil
2 tbs soy sauce
2 tsp grated peeled ginger
1/2 tsp Chinese five spice powder
1/4 cup hoisin sauce
Toasted sesame seeds and sliced green onions
Heat a grill. Brush grates with oil. Combine oil, soy sauce, ginger, five spice powder, and pepper in a bowl. Add chicken, toss. Thread chicken onto 4 skewers. Thread peppers and bok choy on 4 more skewers. *Grill chicken until marked, brushing with hoisin sauce during last minute of grilling. Sprinkle with seeds and green onions. *Brush vegetable kebabs with oil, season. Grill until vegetables are charred. SERVE with chicken kebabs & ENJOY...
