SLOWCOOKER VEGGIE STEW
MAKES 4 SERVINGS.
1 pound beef chuck, cubed
3 onions, sliced
2 tbs butter
3 cloves garlic, crushed
3/4 cup chicken stock
1/2 cup beer
1 3/4 pounds potatoes, peeled, cut into chunks
4 carrots, peeled, cut into chunks
2 tbs chopped parsley
Heat a skillet. Cook beef until browned. Transfer to a slowcooker. Add onions to skillet, cook 2 min. Add butter and garlic, season, cook until onions are softened. *Stir in stock and beer, simmer 2 min. transfer mixture to slowcooker along with potatoes and carrots. Cook on low 8 hours, season. Sprinkle with parsley before SERVING & ENJOY...
