GREEN-WHITE PIZZA WITH CHEESES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 cups basil
1 tbs lemon juice
1 clove garlic, peeled
3/4 cup grated Parmesan
1/3 cup plus 2 tsp oil
1 pound squash, sliced
1 1/4 pounds pizza dough, divided into 4 balls
1/2 cup ricotta
1 jalapeno, seeded, chopped
Prepare grill. To processor or blender, add basil, lemon juice, garlic, 1/2 cup Parmesan, 1/3 cup oil, 1 tbs water, and salt, pulse until smooth. Transfer to bowl, set aside. *In bowl, toss squash with remaining oil and salt until coated. Grill until tender and grill marks appear. Transfer to bowl. *Stretch and roll dough balls as thinly as possible to 8" diameter. Place pieces of dough onto grill. Grill until grill marks appear. Turn over, divide pesto, squash, ricotta, and jalapeno among pieces of dough. Grill until cheese melts and bottoms of crusts are browned. Transfer pizzas to platter. Sprinkle pizzas with remaining Parmesan. SERVE & ENJOY...
