POTATO SICILIAN CHICKEN
MAKES 4 SERVINGS.
1 lemon, sliced
1 pound potatoes, halved
3 tbs oil
1 1/2 tbs chopped parsley
4 chicken drumsticks and 4 chicken thighs
3 cloves garlic, sliced
1 tsp oregano
3 green onions, cut into pieces
2 oz pitted olives, sliced
In a bowl, toss lemon with salt. Let stand until softened. In a skillet, cook potatoes in 1/2 cup water until liquid has nearly evaporated. Add 1 tbs oil, cook until golden. Remove from heat, stir in parsley, keep warm. *In a skillet, heat remaining oil. Season chicken, add to pan. Cook until browned. Transfer to a plate. *Discard all but 2 tbs fat from pan. Add garlic and lemon, cook until golden. Stir in 2/3 cup water. Add chicken and oregano, cook chicken until cooked through. Stir in potatoes, green onions, and olives, cook 2 min. SERVE & ENJOY...
