SPICED RATATOUILLE WITH GRITS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 eggplant, peeled, cut into cubes
3 tbs oil
2 bell peppers, chopped
1 onion, chopped
3 cloves garlic, chopped
1 1/4 tsp coriander
1/2 tsp crushed red pepper
1/4 tsp cinnamon
12 oz squash, chopped
2 tomatoes, chopped
2 tsp red wine vinegar
15 oz can coconut milk
1 cup grits
Sprinkle eggplant with salt. Let stand 20 min. wring liquid from eggplant. *In pot, heat 2 tbs oil. Add eggplant, cook 5 min. transfer to bowl. To same pot, add peppers, onion, garlic, spices, and salt. Cook 4 min. Stir in squash, tomatoes, and remaining oil, cook 10 min. Add eggplant. Simmer 10 min. Stir in vinegar and pepper. *In pan, heat coconut milk, 2 1/4 cups water, and salt to boiling, whisk in grits. Cook until grits are tender. SERVE immediately with ratatouille & ENJOY...
